Vinification
The Sangiovese grapes used for this particular product are harvested early and come from the thinning of grapes from the estate’s various vineyards. The grapes are destemmed and, after a gentle pressing, are left on the skins for 12 hours. The must is then cooled to 10°C to encourage the natural static settling of impurities. After 48 hours, it is transferred to stainless steel tanks, where fermentation takes place at a controlled temperature of around 16–17°C. The wine is then re-fermented and kept in an autoclave at 15–16°C for approximately 90 days.
